Northwestern Ontario Fish Cakes
INGREDIENTS:
* 1 1/2lbs fish fillets, cooked & flaked
* 3tbsp onions, chopped fine
* 1tsp parsley flakes
* 1/8tsp pepper
* 2drops Tabasco sauce
* 1 1/2 potatoes, cooked
* 1tbsp celery, finely chopped
* 1tbsp green pepper, finely chopped
* 1/2tsp salt
* 1 egg, beaten
* 3tbsp oil
* cornflakes, crushed
DIRECTIONS:
1. In a medium-sized mixing bowl, combine all ingredients together, blend well and form into 6 cakes.
2. Roll cakes in finely crushed cornflakes.
3. Fry in oil over moderate heat, until lightly browned and heated through(approx. 4-5mins each side).
