Beaver Atlanta Special
INGREDIENTS:
* Beaver, 8 - 10 pounds
* 1 bay leaf
* 2 medium onions
* 2 garlic cloves
* celery leaves
* flour
DIRECTIONS:
1. Remove most fat from beaver. Cut up as you would a rabbit, soak overnight in salt water.
2. Parboil until about half cooked in water with the bay leaf, onions and garlic. Add celery if desired.
3. Drain, roll in flour and brown in hot fat, season with salt and pepper.
4. Bake in covered pan in moderate oven until tender
5. Gravy can be made from drippings
