Fried Rabbit
INGREDIENTS:
* 2 rabbits, cut into serving pieces
* 1tbsp salt
* 2cups vegetable oil
* 2 egg yolks, beaten
* 3cups milk
* 1.25cups flour
* 1/2tsp salt
* 2tbsp baking powder
* 1/4tsp onion salt
* 1/2tsp black pepper
* water
DIRECTIONS:
1. Boil rabbit pieces in saucepan with 1tbsp salt and sufficient water to cover meat, for 35 minutes, or until tender.
2. Make batter by adding sifted flour, salt, baking powder, onion salt, and black pepper to beaten egg yolks and milk. Mix until batter is consistent in texture.
3. Dip pieces of rabbit in batter, then fry in a deep fat fryer at 360F until golden brown.
4. Drain well and serve.
