Venison Steak in Wine
INGREDIENTS:
* 3lbs. venison steak
* 1/4cup flour
* 1/2tsp salt
* 1/2tsp pepper
* 1/4cup butter
* 3 med. onions, sliced
* 1 green pepper, sliced
* 1 can mushrooms, drained
* 1/2cup butter
* 2cups canned tomatoes
* 1/2cup red cooking wine or burgundy
DIRECTIONS:
1. Trim steak & wipe with a damp cloth.
2. Cover steaks in flour, by putting flour in a small bag, then place steaks in bag individually & shake until the meat is covered, repeat for each steak.
3. Melt 1/4cup butter in frying pan, add steaks and sauté until meat is browned on both sides.
4. Remove meat from pan & keep warm.
5. Melt 1/4cup butter in pan, add onions, green pepper and mushrooms and cook until onions are soft. Add tomatoes.
6. Place steaks in sauce in frying pan, cover & simmer until steaks are tender, approximately 15 minutes.
7. Add wine, cover, and simmer another 4-5 minutes.
